Talking about candida food, my friend discovered a plethora of low carb protein bars on a recent visit home to the US (from Canada), coming in at 1-3 grams of carbs. One is Metabolift from Twinlab while the other is Ultimage LoCarb from Biochem. Her plan is to keep them on hand to help curb her after dinner sweet tooth. And she said that they actually taste sort of good!

They are generally full of other junk stuff like whole wheat flour palm kernel oils, milk powder, traces of peanuts. However, she is thinking that all of the ingredients that are coming in at a low carb count must be way better than the chocolate ice cream. She craves on a daily basis and has occasionally given in to.

However, I believe to take it from the hypoglycemic, glycerin, sorbitol, and malitol are not negligible on blood sugar/insulin levels if you are hypoglycemic or diabetic especially. Be careful if you are like me, who can only have Stevia as a sweetener. Everything else makes me hypo. Glycerin is another form of sugar, and the other two are derived from alcohol.

How Is Tempeh Different from Tofu, and Which Is Healthier?

Once close relatives derived from the soybean plant, Tempeh and Tofu were separated at adolescence, raised and formed for purpose in two different living environments. Yet now, they come together for one epic battle for vegetarian supremacy! Not knowing of their past, their disdain for one another is based on a misunderstanding of how similar and beautiful each is to one the other -- how... complementary... they are of one another. So we may all help to teach others and teach these native sons of soy how to better tolerate one another, we must first understand how Tempeh and Tofu came to be.

OK. Enough of that. Let's get right down to it: a primer on the soybean.

What is Tempeh? Tempeh Defined

Tempeh is to the soybean as spam is to ham, except far less disgusting and much better for you. Tempeh is made through a relatively simple process: the soybean is first made tender through soaking and then it's de-hulled. The beans are partially cooked, and then pressed into a layered cake or patty form. There are other forms of tempeh that can be derived from whole wheat or a mixture of soy and grains, yet the most commonly found variation is soy tempeh.

The protein in tempeh is far more digestible than what you would ingest through animal proteins, due to tempeh's fermentation process. As a result, combining tempeh with other meats or simply using it as a substitute has been known to greatly aid in overall digestive health. Different from tofu, tempeh is a whole soybean product that offers higher amounts of protein and dietary fiber, as well as vitamin content, all due to the fermentation process preserving the whole bean.

What is Tofu? Tofu Defined

Like tempeh, tofu is derived from the soybean, yet after the bean has been processed to the soy milk product. In it's simplest form, tofu is to the soybean as cottage cheese is to dairy milk. It is the curd of soy milk pressed into chunks, slabs or bricks. Of course there are varieties of tofu, ranging from what is known as silken or soft tofu, often used in desserts, to the more common western or dried tofu that is so versatile in cooking everything from traditional Asian cuisine to filling for soups. Full of iron and calcium, as well as being cholesterol free, you can see how it serves as a great addition to any diet, especially the diet of a pregnant or aging individual.

With regards to nutritional value, tofu does one-up tempeh as it offers more protein per carbohydrate, while offering a little more versatility in terms of the dishes and foods with which it can be combined. It is easily marinated and seasoned, can be made with egg, cinnamon, fruits and nuts -- offering a fairly wide variety of flavors. It can also be found in fermented varieties, such as pickled tofu, though this isn't necessarily for everyone. Therefore, in our quest to determine which soy reigns supreme, we're slightly stumped as they both offer great edible options.

After writing the list for the top five summer snacks that are healthy, I got to thinking. What are some of the unhealthiest snack options for kids out there? Since we already know that cookies, chips, and soda are not healthy for our kids, what about the less notorious items? Here is an impromptu list of the Top 5 foods or snacks you should STOP feeding your child now! Here's why:

1. Yogurts - This one has proven to be a jaw-dropper every time! What, no yogurt for my kid(s)? Why? How will they get their calcium, probiotics, and other "healthy" things yogurt contains? This is an easy answer - because so many of the popular yogurts marketed to kids are LOADED with sugar, they are automatically a no-no in this mama's house! There is healthier yogurt, like plain, and greek plain, but my kids don't like to eat them just by themselves. (Go figure, after years of high-sugar intake, their little taste buds and ideas of "good" foods are a little off!) So we add a small amount of agave or honey (or Truvia) and put it in the blender with berries for a quick smoothie, or get our calcium and probitoics elsewhere. I buy the once-daily pediatric probiotic powder (Nature's Way - Primadophilus Children) for the live cultures, and found that the unsweetened, Non-Gmo soy milk I give my kids (Silk brand) has just as much calcium, protein, and potassium as dairy milk (or yogurt) but without all the sugar! Win-win in our kitchen.

2. Lunchables - Whoa, now I've gone too far! This one was tough eliminating at first, (think time saver!) but after poring over the labels on these expensive doo-hickeys, I quickly saw that they are so unhealthy for my little ones. Loaded with sugar, sodium, bad fats and preservatives, I have instead turned to making homemade mini -lunches instead. An all-natural cheese stick, with some pepperonis, and a few whole-wheat Townhouse crackers, and my kiddos are lovin' it! Good for their taste buds, good for their bodies.

3. Juice - This one can also put the shock on moms, as you think, it's from fruit - healthy, right? Fruit juice is one of the WORST things you can feed your child, just because most of them are loaded with sugar and preservatives. Much better to just eat the fruit! Let's do a quick sugar tally: OJ in the morning with breakfast (8 oz.), 20-28 grams sugar. Apple juice ("No added sugar" on label!) with lunch (8 oz. serving) 28 grams of sugar. Caprisun after school (regular), 17 grams sugar. By the end of the day, that's 66-74 grams of sugar - just in JUICE! Kids should ideally not be drinking/eating more than 20 grams of non-natural or added sugar daily! Wow, what a revelation. Try this instead: Light OJ (Minute Maid's is really tasty) - only 10 grams of sugar, no aspartame. Water apple juice down in half or two-thirds. Try Caprisun's "Roarin' Waters" line - the sugar content is brought to 8-9 grams of sugar per pouch - much better!

4. Fruit snacks - My dental hygienist friend warned me a long time ago about these babies - nothing but cavity makers! The 15 grams of sugar in one little bag (usually about 8 or so pieces!) is the culprit, and the lack of anything nutritious in them gives them my "wrong choice" vote. My solution: make REAL fruit fun again! We freeze grapes for a fun, cool crunch. Sometimes, we dice watermelon, apples, pears, and pineapple - then squirt a little whipped topping on for added fun. Or, blend some banana and berries into a smoothie, then freeze in small cups with a popsicle stick for a healthy, naturally sweetened ice pop! Craft project and nutritious snack in one!

5. Cereal - So many reasons why this one is NO good! So many cereals out there have way too much sugar (11 grams and up per ¾ cup serving) and nothing nutritious in them. Once you add cow's milk (regular milk), you've got a bowl full of sugar, preservatives, and other toxins in front of your child - OUCH! Better to give the kiddies this: Fiber One cereal (loaded with fiber and NOT loaded with sugars) with soy or almond milk. Now you've got a good choice, and the kids get their crunchies on!

The health status of Soy as a food item has become the subject of fantastic debate. There are vegetarian soy advocates who extol the benefits of eating soy, sometimes to the point of disbelief, and there are the soy fear mongers, would be prophets of doom, scaring us away. Whats the truth? Here is where we sort out the facts.

Tofu is a food product made from coagulated soy-milk. The curd is then pressed into soft blocks. Tofu is soy.

Soy (and tofu) is often used as a source of protein in a variety of "vegetarian-meat" recipes as well as in desserts, soups, smoothies, as soy milk, imitation cheeses and more. It is quite versatile.

However, research has consistently shown that soy is decidedly not friendly to the human body. Not in it's natural state, and especially not in the highly processed state that soy is typically served in.

The mistake in thought that leads us to believe soy is healthy has three main roots:

Mistake # 1

Since soy is a natural food crop; A raw food; A bean that grows from the ground; it must be healthy.

Consider that sugar is also natural. Salt is natural too. They both come from the ground. But we know that these are not healthy foods and should be consumed only in great moderation.

Soy is just another natural food that has highly intolerable properties for the human body. This will be discussed in more detail later on.

Mistake #2

Soy is very prevalent, it's all around us and in so much of our food that we have come to believe that it should be there.

Due to the soybean being one of three native crops in the US which are very highly subsidized and grown, soy is over- promoted and marketed to the American public.

Second only to corn, soybeans are the most government subsidized crop in the United States (wheat is behind soy at number three). Because it's so highly subsidized soybeans are a crop that is actually overgrown in the US. One of many results of the soy surplus is that soy has become a food crop whose use is encouraged by the USDA particularly in its Child and Adult Care Food Program (CACFP).

In extremely moderate amounts, soy would not necessarily be problematic for most people. However soy is so prevalent and available, and manufacturers have devised ways to use soy in so many applications, that it is typically over-consumed even for persons who are not "into" soy.

As a result, the amount of soy in the standard American diet is easily problematic even for those whose body would otherwise tolerate it relatively well.

Worse still are the methods and processes used to make soy useful in it's many applications. The over-processing that soy goes through adds many other external problems and issues to this already problematic food item. This too will be discussed in more detail later on.

Mistake #3

Asians eat vast amounts of soy. We have been sold the idea that Asians eat a diet very high in soy and tofu and live really healthy lives until very old ages as a result of it. This is a wild piece of fiction.

In Asia, soy that has not been fermented, the soy that we eat in the west (tofu and the like), has been used as animal fodder for thousands of years. In actuality, the average consumption of this type of soy by Asians is a fraction of what we eat. What Asians consume on a regular basis is "fermented soy."

In fact, the soybean did not serve as a food in China until the discovery of fermentation techniques (during the Chou Dynasty). The Chinese did not eat un-fermented soybeans as they did other legumes such as lentils because the soy bean contains large quantities of what they believed to be natural toxins or "anti-nutrients."

Soy that has been fermented is vastly different than non-fermented soy and is, in fact, the healthy soy we should be eating. Fermentedsoy actually is quite good for you.

Fermentation adds benefits to food in general. These benefits include pro-biotic bacteria (e.g. acidophilus), higher amounts of vitamins and minerals, and it makes food easier for the body to digest.

Common fermented products are yogurt and kefir, saurkraut and kimchi, many cheeses, some breads, pickles and vinegar.

Fermentation, while releasing the nutrients in the soybean also eliminates the problems associated with soy as a food. This will be detailed later. (Soy milk, tofu and soy cheese, are not fermented products).

Soy products that are healthy are fermented. The main types of fermented soy are; Miso, Natto, Tempeh, and Soy Sauce. (With soy sauce watch out for artificial ingredients and added MSG.)

Fermented soy products, mainly Miso, Natto, and Tempeh are high in protein and are very healthy. These have no negative or unwanted side effects and they are certainly suitable for vegetarians and vegans.

[Other high-protein sources for vegetarians: Fish, eggs and dairy.

Other high protein sources for vegans: First lentils, beans in general (not soybean), oat-bran, broccoli and cauliflower, asparagus, peanuts, avocados...]

Simply put, when we realize that unfermented soy is already in a surprisingly wide range of the processed foods that we eat, then in order to keep our soy intake at a healthy level, or at least non-detrimental, we have little choice but to electively eat soy products in great moderation only.

As will be discussed next, high or even moderate amounts of (non-fermented) soy in the diet can be the source of numerous health complications. Some of which are major issues.

Let's point out though that the issues associated with soy lie mainly with people who use soy as their principal source of protein. Some people view soy as a kind-of wonder-protein, the answer to nearly all food neads, indeed how it is often promoted by soy food-product makers in; soy milk, soy- patties, soy burgers, tofu patties, tofu slabs, scrambled tofu, tofu stir fry, soy cheeses, soy cereals, soy snacks, soy deserts etc. These people consume soy in more than moderation and are the ones who need to be concerned.

For those who use non-fermented soy as an occasional treat, a few of cubes of tofu at a party or restaurant, in a desert here or there, aren't typically in any need of concern. In very moderate use most people shouldn't realize any harmful effects at all.

The issues with Soy

Topping the list of the many issues associated with eating non-fermented soy are:

1) Soy is a phyto-estrogen -

A plant estrogen. This means that consuming soy significantly enhances the body's estrogen levels.

Estrogen is a hormone that has a pivotal role in the bodies of both men and women. It is important for cognitive function, fertility, and many of the changes in gene activity that take place in the body.

Estrogen levels that are too high can wreak havoc with our hormones. For women this can set off cycle irregularities and be the cause of weight gain, headaches, bad temper, chronic fatigue, and loss of libido.

For men it can lead to loss of muscle mass, enlarged breasts, lower libido and can be a precursor to atherosclerosis and arterial diseases.

For both men and women too much estrogen can lead to more serious problems as well.

2) Soy is a goitrogen -

It is a food that is damaging to the thyroid gland. It inhibits thyroid function.

The thyroid gland directly affects our daily energy. It regulates the body's rate of metabolism and affects the growth and rate of function of many other systems in the body. The hormones produced by the thyroid gland, T3 and T4, play an important role in the maintenance of normal blood pressure, heart rate, muscle tone, digestion and reproductive functions.

3) Soy is a trypsin inhibitor -

Trypsin is a digestive enzyme produced in the pancreas.

There are numerous enzymes that allow us to digest our food and then absorb nutrients from the digested food. Trypsin is the enzyme responsible for and required by the body to digest protein.

4) Soy contains phytic acid -

A naturally occurring acid in some grains and legumes.

Phytic acid is often considered an anti-nutrient because it is a fiber that impairs the absorption of minerals. It will interfere with and disrupt the body's ability to absorb calcium, iron, magnesium, and zinc.

5) Soy is a techno-product overkill -

The methods used to make soy protein products add problems to this already troubling food item.

"-Production of modern soy protein products takes place in industrial factories where a slurry of soy beans is first mixed with an alkaline solution to remove fiber, then precipitated and separated using an acid wash, and finally, neutralized in an alkaline solution.

Acid washing in aluminum tanks leaches high levels of aluminum into the final product. The resulting curds are spray-dried at high temperatures to produce a high-protein powder.

A final negative process to the soybean is high-temperature, high-pressure extrusion processing of soy protein isolate (SPI) to produce textured vegetable protein (TVP).

High-temperature processing has the unfortunate side-effect of so denaturing the other proteins in soy that they are rendered largely ineffective.

Nitrites, which are potent carcinogens, are formed during spray-drying, and a toxin called lysinoalanine is formed during alkaline processing.

Numerous artificial flavorings, particularly MSG, are also added to soy protein isolate and textured vegetable protein products to mask their strong "beany" taste and to impart the flavor of meat.-"

"Soy Protein Isolate (SPI)," "Textured Vegetable Protein (TVP)" and "Hydrolized Vegetable Protein" are key words to look out for on ingredient panels. Avoid products that use these techno-produced soy items.

6) Soy is a GMO -

Genetically Modified Organism. Most soy products are made with soy crops that were modified at the gene level. It's actually very hard to find soy that is not a GMO.

-Genetically modified soybeans are called 'Roundup Ready.' They are inserted with a bacterial gene, which allows the plants to survive a normally deadly dose of [the herbicide] Roundup. Although the spray doesn't kill the plant, its active ingredient called glyphosate does accumulate in the beans themselves, which are consumed by [..] livestock and by humans. There is so much glyphosate in GM soybeans that when they were introduced, Europe had to increase their allowable residue levels 200 times [in order for the crop not to be in violation].-

Toxic to Mother and Child- Glyphosate throws off the delicate hormonal balance that governs the whole reproductive cycle. It is also toxic to the placenta, the organ which connects the mother to the fetus, provides nutrients and oxygen, and empts waste products.

In a 2009 French study at the University of Caen, scientists discovered that glyphosate can kill the cells in the outer layer of the human placenta (the trophoblast membrane), which in turn can kill the placenta.

-The placenta cells are, in Ewen's words, "exquisitely sensitive to glyphosate." Only 1/500th the amount needed to kill weeds was able to kill the cells. The amount is so small, according to the study authors that the "residual levels to be expected [to be present], especially in food and feed derived from R[oundup] formulation-treated crops" could be enough to "cause cell damage and even [cell] death." Furthermore, the effect of the toxin may bioaccumulate, growing worse with repeated consumption from Roundup laden foods.-

-In a Canadian epidemiological study which looked at nearly 4,000 pregnancies in 1,898 couples, women exposed to glyphosate during the three months before getting pregnant had a significantly higher risk of miscarriage, especially for those above 34 years of age.-

In the Canadian study above, even fathers who were exposed to glyphosate before their wives got pregnant showed an increase in early delivery and miscarriages.

7) Soy is not for babies -

Most concerning is the notion that soy is good for babies, for children, or for use in infant formulas.

An overwhelming number of published studies, confirmed by Dr. Mike Shelby director of CFSAN (Center for Food Safety and Applied Nutrition), have concluded that soy repeatedly jeopardizes developmental health.

In 2002, researcher Retha Newbold of NIEHS (the National Institute of Environmental Health Sciences) expressed concern when her colleagues demonstrated that soy genistein (a soy estrogen) "triggers reproductive abnormalities... including a rare form of cancer called uterine adenocarcinoma."

Something that is toxic to the reproductive tract is toxic to multiple hormone systems throughout the body and brain as well.

Thyroid alterations are among the most frequently encountered autoimmune conditions in children. Research at Cornell University shows that -in children with autoimmune-thyroid disease the amount of feeding of soy-based formula in the first stages of life was significantly higher .- In a previous study, they found that twice as many diabetic children had received soy formula in infancy as compared to non-diabetic children.

The maternal consumption of soy products transfers estrogenic hormone disruptors to her fetus, and again to her child while breast-feeding. The amount of phytoestrogens in one days dose of soy infant formula is the same amount that's in five birth control pills.

Multiple studies conclude soy phyto-toxic causation of an assortment of severe, painful and often irreversible neurological and physiological disorders, and these diseases are more often caused during developmental exposures [to soy].

Soy phyto-estrogens also abnormally manipulate ER-alpha and ER-beta hormone systems disrupting extensive endocrine systems throughout the entire body and brain.

The negative effects of soy on the endocrine system are trans-generational, passing damaging endocrine disruptor effects from parent to child.

The FDA's Poisonous Plant Database includes "Soy bean, genistein and daidzein [soy estrogens]" on its list of poisonous plants. Developmental exposures to soy estrogenic endocrine disruptors fail to meet several FDA codes and regulations.

Soy infant formulas also contain high amounts of corn syrup and sugar, known to be developmentally debilitating. High levels of corn syrup and sugar can lead to pancreatic damage which interrupts insulin production then leading to infant and childhood diabetes type 1 and type 2. High levels of sweeteners also damage the thyroid and thymus glands.

8) Soy and the Genistein myth -

Genistein is an organic compound providing phyto-estrogens and showing some anti-oxidant effect, but the benefits of genistein come at a high cost.

Women have been encouraged to use high genistein soy products to alleviate symptoms of menopause and as a guard against bone loss and breast cancer. But given the full range of effects of genistein in the body, high consumption could result in age-related memory loss. Commercial soybean products offer genistein levels as high as 20 to 60 mg per serving.

Because their incidence of breast cancer and osteoporosis is low, Asians are used as an example of the benefits of eating soybean products. However, the Asian diet of 'fermented' soybean products such as miso and tempeh includes only around 5 mg of genistein a day.

Genistein slows the growth of blood vessels serving tumors, another action that makes it popular as a cancer fighter. However, it has this same effect on blood vessels serving normal cells. Eating a regular diet high in genistein could result in the starvation of healthy blood vessels, resulting in a reduced supply of oxygen to cells, thus setting up a cancer promoting situation.

In a graphic example of how genistein slows cellular energy, a study found that eating high levels of it slowed hair growth by 60 to 80 percent.

A decade ago a study of 8,000 Asian men showed that those consuming the highest amounts of tofu had smaller brain size and nearly three times the rate of senile dementia as those who ate the lowest amounts. These results suggest that eating foods high in isoflavones such as soy protein isolates may accelerate the aging of the brain.-

9) Soy; the Money machine -

Soy production and sales is a four billion dollar industry in the US. Hence, the public relations hype extolling the virtues of soy have been global and relentless. There are at least 100 million acres of soy under cultivation in the United States alone, most of it genetically engineered.

The Monsanto Corporation itself has 45 million acres of genetically modified soybeans growing in the United States. American law permits these crops to be mixed with a small amount of organic soybeans, and the resultant combination may then be labeled organic.

-There is a distinct herd instinct among people who 'work in science' which makes it easy to believe whatever sounds plausible, if a lot of other people are saying it is true. Sometimes powerful economic interests help people to change their beliefs. For example, two of the biggest industries in the world, the estrogen industry and the soy bean industry, spend vast amounts of money helping people to believe certain plausible-sounding things that help them sell their products.-

Conclusion: Though soy is promoted as a health food, the value of those claims are checked by a mountain of evidence and research detailing soy's many problems. It seems wise to keep, elective, non-fermented soy intake low or very very moderate.

Rules of thumb for using soy:
Fermented soy products like miso, natto and tempeh are very healthy. Have Lots of These!
Techno-soy products like soy protein isolate, textured (and hydrolized) vegetable protein are unhealthy. Have None of These! (or, extremely few of them at the least.)
Tofu and the like (e.g. soy milk, soy cheeses..) have all of the same negative properties of any non-fermented soy products. Although as far as processed soy products go they aren't as techno-nasty as SPI or TVP. These are nonetheless not healthy. Eat very Moderate Amounts of These! Which means not as a total protein replacement nor as a daily staple.
Give no non-fermented soy to infants, to small children, or to pregnant women. None! Even as a treat!!

As the saying goes, "knowledge is power." From this standpoint, of knowledge, we know what the realities are with regards to soy as a food. We now can eat soy products responsibly, making educated decisions as to which products to consume and which not. Or, which to have in moderation and which to have on occasion.

One of the most rewarding things that I do each day is to get up a little earlier to get for a early morning walk/run. It is a great way to start the day. I find that it is most effective first thing in the morning. It starts your metabolism and sets it up for the rest of the day. Another reason that early morning is best is because if I don't get it in then, I'm usually too busy and the day is gone. This a great time to clear my head, set my focus, look on my life and be thankful for what I have. Many times we get caught up in all that we don't have and fail to realize all that we do have. It's a great time to re-establish focus. Health fitness and weight loss starts at the top and rolls down hill. For me, it's Spiritual alignment, which puts my mental focus is in order and everything else follows. The morning air smells so great. The birds are singing, the sun is starting to come up and it's a clean slate, a new start to try to improve on the things that may need work.

I usually spend about a half hour or more. I try to keep it easy to maintain and attain every day. For me it's about being consistent, not pushing myself to the limit for one day and getting hurt and not being able to work out for the rest of the month. After I get back I will sit and read something Spiritual, inspirational and enter into prayer and adoration. This is the highlight of my day. I cannot live life at the same level without this. It is my anchor and my rock. From this comes my energy, strength and focus. My diet radically changed years back as I turned 30. As I learn over the years, I refine what I eat to fit into what I'm looking to accomplish. Food is not my master.

Here's my recommendation for breakfast, lunch and dinner:

Breakfast - cooked oatmeal or something like it, fresh fruit, water, juice and almond milk. You can eat a big breakfast.

Snack - nuts, fruit, vegetables

Lunch - chicken or fish, salad, vegetables and fruit

Snack - fruit and vegetables

Dinner - some type of chicken, fish, red meat (on occasions), mixed with vegetables and fruit platter for dessert.

You should try not to eat after 6pm. Try to drink as much water and fresh juice as possible. If you can have water with you so you can drink it all day.

Usually at night I'm trying to get a workout in using weights. I'll usually try to get one - two body parts in a day, working out about four times a week.

This is a lifestyle that I fit into my busy day. I find that if I make it a routine, I'm much more likely to consistently do it every day. I find that I'm most successful when I wake up and as soon as I open my eyes, my feet hit the floor. This way there's no time to think and talk myself out of it. You know what I mean?

Someone asked me once on a television interview what my definition of true health was- my answer, albeit too simplified for the scientific scholar was, "The absence of disease on all levels - meaning physical, mental, emotional and even spiritual." I happen to believe that every person can improve their level of health by making better choices.

My number one rule to living a healthier life is to make a daily effort to choose a path toward wellness and away from disease. Choose a journey that brings joy. Be with people you adore, don't participate in conversations that bring others down, be honest, hold onto the highest of integrity. Share your gifts and talents. Participate in hobbies and activities that enrich your life and the lives of others whenever possible. Allow yourself to be truly loved and allow yourself to love someone completely. Love can be a grand healer.

Do things that feed your spirit...listen to someone who inspires you. Perhaps you might attend a concert, seminar, go dancing, take a tour, go for a bike ride, walk in the woods, travel, meditate, practice yoga...your choice. On top of these things start to learn what it is that really keeps your body in top condition. Once you understand how nature works you will not be ill as often. If you give your body what it needs to do its job, it generally will!

So let's talk about FOOD HEALING.

This may be surprising to you, but the human body is composed of about 15 main biochemical elements with added trace elements to small to mention. Here is the breakdown:

The human body is comprised of up to 70% water. Every three or four minutes with the aid of the beating heart, the body's blood goes through the lungs. The blood stream carries carbonic acid waste to the lungs to be oxidized by the oxygen and exhaled. Oxidation produces heat. By this fact it is possible to burn food in a laboratory to determine the amount of heat or calories it produces.

In chemistry we know that there is an atomic weight and innate wisdom principles within the body that send these chemical compounds to certain structures of our bodies.We have hard teeth, soft colon, tough tendons, malleable fingernails, a red heart, yellow bile, perhaps purple, blue, green in the eyes, blonde, red, or brown hair. Some people have glowing or sparkling eyes, others have eyes that are more dull. All elements have their specific scope of action and characteristics and so do we. We are all human but with unique biochemical makeups that give us variety or what I call "the spice of life!" Life, with all of its intracacies and nuances is surely miraculous.

Let us use Nature's remedies...our bodies are built from the elements of nature. Disease then most begins in the diet with poor choices, or inadequate food supplies, from there we must consider the mind and emotions of a person.. Sometimes we take too much of one element and it causes an imbalance and other times we take too little and imbalance occurs. This happens physically, mentally and emotionally as well. Too much of a good thing may detract from life.

For example, when we do not have enough organic sodium in the diet it leads to stomach trouble but too much sodium can lead to heart disease. A low iron diet leads to anemia and yet inorganic iron can produce constipation. The right amount of lovemaking can improve one's state of health but too much can make you go blind! NO NO NO - I'm just kidding, just wanting to keep you on your toes! But truly, using your mind in your daily occupation is important for continued mental acuity, but watching television all day may detract from your mental fortitude. Enough exercise will keep your body nimble and strong, overworking a muscle may cause injury. So you see we must choose balance.

I have found that there are seven bad habits one must break in order to be healthier: Eating too often, eating too much, talking about sickness, losses and diseases, eating fried foods, smoking, and worrying about what is yet to come. These things bring one into a very acid state of life where disease seems to breed.For me, prevention is the best answer, although I have found that many people must be one step short of dying to take their health seriously. Even if you are not in tip top shape you can improve in some way so that life is more enjoyable.

There are clues in nature and within our own bodies that can help guide us to better health. Just as we can watch the birds in nature make correct choices to sustain their little bodies in flight, we must look at the human frame to determine what is best for us. Our taste buds register four different sensations, sweet, salty, bitter and sour. The back of the tongue is more sensitive to bitter, the sides react more to sour and salty and the tip to sweet. That's another biological clue that we are to eat a variety of foods. Our teeth are also a clue; we have teeth that grind and teeth that rip and tear.

In food chemistry we know that we should apply the Acid/Alkaline food theory for perfect health. The dietary ratio should be 80 % akaline foods and 20% acid forming foods. Biochemistry divides foods into these two basic categories, and rest assured we need some of both for the spark of life to occur. One must "strike" the flint to make fire. Before any food is digested it takes the presence of ENZYMES. Enzymes are the body's catalysts that make biochemical processes possible. For instance the first enzyme is ptyalin found in the saliva. Ptyain converts starches into maltose for further digestion by the enzyme called amylase produced by the pancreas. This enzyme splits maltose into polysacharides or multiple sugars and still more intestinal enzymes change these to simple sugars which are absorbed through the walls of the small intestine The liver stores sugars for later use in the form of glycogen. Okay enough chemistry--let's get back to food. But one more thing, if you really have poor digestion try eating one type of food at a time...then your enzymatic activity won't get confused by the multiple food forms and complete digestion can occur. In general the acid/alkaline balance is not only reflected in the state of physical health one displays but in the mental and emotional states as well. When the sun is up we are causing acid building due to mental activities, but when the night is upon us it is the alkalizing moon that causes us to rest and establish balance. negative thoughts and attitudes such as fear, hate, gossip, unhappiness, anger, selfishness, jealousy, lack of love all build acids as does overwork and late hours and pollution. Rest, sleep, fresh air, sunshine, laughter, good companionship, love happiness, joy satisfaction and a positive philosophy encourages alkalinity. we have alkaline fruits and slightly acid fruits. We have alkaline vegetables and slightly acid vegetables. For example:

Highly Alkaline fruits include:

Apples, apricots, avocados, speckled bananas, all berries, cactus, cantaloupe, cherries, currants, dates, figs, grapes, grapefruit, guavas, kumquats, ripe lemons and limes, mangoes, all melons, nectarines, olives only sundried, oranges, papaya, pears, persimmons, plums, prunes, quince, raisins, tamarind, tangerines, tomatoes.

Slightly acid fruits include: all preserved fruits, sugared fruits or dried fruits, sulphured fruits, sugared fruits, pickled fruits and fruits that are not ripened yet--all "green" fruits.

Highly Alkaline vegetables include vine ripened:

Asparagus, bamboo shoots, beans, green, lima, string, sprouts, beets and tops, broccoli, cabbage, carrots, celery, cauliflower, chard, chayotes, chickory, chives, collards, cucumber, dandelion, dill, dulse, eggplant, endive, escarole, garlic, horseradish, jerusalem artichoke, kale, kohlrabi, leek, legumes, lettuces, mushrooms, okra, onions, parsley, parsnips, peppers, potatoes, pumpkin, radish, rutabaga, salsify, sauerkraut, sorrel, soybeans, spinach, squash, turnips, water chestnut,m watercress.

Slight acid vegetables include: artichokes, white asparagus tips, all dried beans, brussael sprouts, garbanzos, lentils and rhubarb.

There are some alkaline dairy products such as acidophilus cultured milks, buttermilk, whey, yogurt, clabbered milk and kefirs. And acid-forming dairy products such as butter, cheese, cottage cheese, cream, ice cream, sherbert, custards, all milk that is pasteurized, dried or canned.

Here is something interesting to remember...there are NO alkaline flesh foods! that means that beef, lamb, pork, chicken, goose, venison, fish, turkey, quail...are acid forming foods. The closest alkalizing element in the family of flesh foods is their bones and their blood! So, when you eat whole fish such as in sardines and chew those little bones it is a good balance as long as you soak the salt away first.

All alcoholic beverages are acid, and 99% of the grains are acid as well. On the chemical scale the most alkaline of the grains is buckwheat and the most alkaline nut is a raw almond..and I nearly forgot - coconut if it is fresh.r

The neutral foods on earth are:water, naturally occurring oils such as unrefined and cold pressed olive, corn, cotton, soy, sesame and other fats.

If we know how to use foods as medicine we can change the body chemistry and improve health tremendously. We are meant to enjoy good health not suffer in sickness and misery. I remember Dr. Garnett Cheney in San Francisco telling a story having treated 100 patients with the juice of raw cabbage which gave the fastest relief as cure for uncomplicated peptic ulcers. Symptoms disappeared in the first few days and he proved by x-ray exam that the ulcers themselves disappeared in as brief a time as a week. No medicine or other diet was employed. Now that is powerful food medicine.

As we move to the plant kingdom we find where most all medicines of the world are derived. Herbs such as ginseng as researched by the Russians, increases the body's resistance to disease and stress. Physical and mental efficiencies are increased, blood sugar is reduced in diabetes and blood pressure normalized. Panax Ginseng was the type used in the Russian study. There are other forms that promote different responses, and it is not wise to take any herbal formula, by the way, without consulting your physician and or/pharmacist. French researchers showed thaht elderly persons troubled with memory lapses, slow thinking showed improvement after a week of taking ginseng and remarkable improvement after two months. However, add to this vitamin and minerals supplements were given.

Some of my favorite life-givers are the super greens of the world. Things such as chlorophyll, the pigment that makes plants green and allows them to synthesize food using the energy from the sunshine. This is a powerful cleanser for the body. All green leafy vegetables are a good source of chlorophyll. Interesting that it porphyrin molecule is almost identical to the hemoglobin molecule of the blood.

Two other super green foods are spirulina and chlorella, both green microalgaie available today from many health food stores in powder or capsules or tablets. It is rich in protein, chlorophyll, vitamins, minerals and biochemical elements. Spirulina gets its name from the spiral shape which shows up under the microscope. Chlorella is a single-celled microalgae round in shape.

Evening primrose is one of the most fascinating and useful of the herbal remedies. The whole plant is edible and oil taken from its seeds can be used for skin rashes and other skin problems. It is also highly useful in women's health. I won't go on about the thousands of herbal plants that feed us well...but I will mention one lastly here - and that is:

Milk Thistle is a brilliant plant that actually works on the liver to help support and rebuild it. It is one of the finest plants to help detoxify poisons especially from the liver. Go slowly with this one as it is powerful. there are many companies that sell Milk Thistle - also called sylimarin, so check with your health food store expert for the best one available today.

Today we have discovered that there are many plants which give support to hormonal production and sometimes these plants can act as well as prescriptive medications. I know that natural medicine provides for phyto estrogens and progersterones such as those derived from Black Cohosh, Wild Yam, Fennel, and Fennugreek. More are in research. We find that Velvet Deer Antlers (tissue before it becomes a horn or hardened) are helpful to the male and female because they are rich in every nutrient known to sustain life. Again when you look at the place on the deer's body - this is a "protruding" structure and one would imagine that likes curing likes - it would be beneficial to our "protruding" parts, male and female. Makes sense to me!

Here are some fun facts: People from various parts of the world enjoy strange foods: Vindaloo, is a Burmese savory dish of fish which has been buried in the earth for three weeks! Eskimos eat rotten fish and meat with no ill effect! Connoisseurs in Britain will not eat meat unless it has been "hung" for several days. Herman Almquist of the University of Cal years ago found that chick bleeding could be cured by using putrid fish meal which is high in vitamin K, the coagulative vitramin. And in European pharmacopeioas there is a prescription of an "elixir of long life," the formula being a compound of aloes and other purgatives.By the way if you are constipated Aloe Vera is a wonderful aid to irregularity. You can find 100% natural aloe suitable for ingestion in liquid or capsule form. A plant called Senna is also a very powerful bowel stimulant but should not be used regularly because one could get "hooked" on its incredible power.

And now just a bit of how certain foods can become your medicines:

Keep a jar of raw honey handy incase you cut yourself, or get a sore throat - raw honey contains natural antibiotic and antiseptic properties. But I will emphasize that the honey must be in a RAW state - the way it exists in nature and before some companies heat it. As chemists know, heating elements in nature or in the lab changes the chemical compound. Somtimes it is a benefit and other times not. Eating RAW honey is the superior way to go!

Beet tops are wonderful blood purifiers and putting these leaves in the bottom of a stainless steel pan prevents burning your food. In European countries celery was used to rejuvenate Olympic athletes with great results. It is the most cooling thing you can have in the body after arduous competitive games. If you want to stay cool in the summer mix celery and pineapple juices for it replaces the salts lost in perspiration on an extremely hot day. Cucumbers are also a cooling food because they are high in organic sodium just like celery...and will help you stay "cool as a cucumber."

Leeks are good because of their powerful effect in driving out various forms of germ life in the body, not dissimilar from garlic's ability to kill bugs. Onions are also great for ridding the body of catarrh. Onion packs have been used for centuries for chest conditions, just like hot mustard packs grew in popularity for their ability to heat the body.

Lemon Juice is nature's most powerful antiseptic use it internally and externally. you can apply it to corns, on your scalp, on sores, use it for an eyewash or gargle...People in various countries known these things because they are far from medical hospitals or doctors and must know the value of the plants to survive.

Lettuce - there is not much nourishment in head lettuce - but juicing it up will make you sleep soundly at night because it contains an opium-like by product that also slows digestion.

Mushrooms -such as Shitake, Maitake, and Reishi are used today in various formulas to prevent disease because they are rich in germanium which increases the amount of oxygen in each cell. Where there is an oxygen rich environment disease is scant.

Nuts- raw nuts are best - to work as nerve elements also high in manganese and zinc which feed glands such as the prostate. Walnuts when cracked open look like a brain - get a clue there.

Papaya is very good for stomach troubles and helps to digest food. It helps to breakdown toxic protein deposits all over the body. LIke pineapple, papaya contains protease, an enzymes that helps to metabolize proteins. Infact, leave some papaya tablets or slices of raw pineapple on meat overnight and in the morning you will find a mound of mush! I know this to be true I've ruined some holiday hams forgetting not to add fresh pineapple while crockpotting. I've suggested chewing papaya tablets for mouth troubles to many people over the years and the result is always positive.

Pumpkin seeds are terrific protein and help to eliminate certain critters in the body while supporting the prostate gland as well

Radishes are good for gallbladder or catarrhal conditions. Try some of the Korean radish dishes and you are sure to start sweating...horseradish is great on the tip of the tongue to clear a stuffy nose. Hold it for 30 seconds and you will start to clear your sinuses

Red foods are usually blood builders and glandular foods. All of the berries are powerful anti-oxidants and are deep red in color. Nature is kind to us by giving us so many clues. Hello there, I have compiled a list of low carb foods and some good substitutes for the higher carb foods in your diet. Start incorporating these foods into your diet and jump start your body's fat burning power.

Fruit - Start eating low sugar fruit. The best choices are small amounts of lemon and lime, rhubarb, raspberries, blackberries, and cranberries. These fruits contain the lowest amount of sugar than any others. Other fruits that contain slightly higher amounts of sugar but are still good choices include cantaloupes, blueberries, peaches, nectarines, papaya, casaba melon, watermelon, strawberries, honeydew melons, apples, guavas, apricots, and grapefruit. Fruits that are fairly high in sugar include pineapple, plums, oranges, kiwifruit, and pears. Fruits that are extremely high in sugar include cherries, tangerines, mangoes, cherries, grapes, pomegranates, mangoes, figs, and bananas.

Nuts and Seeds - Nuts and seeds are packed with nutrients and are great substitutes for more starchier foods like wheat. Flax seeds are extremely healthy and low in carbs. A combination of healthy fat, protein, and fiber make them appetizing to eat.

Dairy products - The amount of dairy you can eat will depend on how sensitive your body is to carbs. Some people can stomach more dairy than others. Milk contains a fair amount of sugar but is broken down over a longer period of time than other sugars. Many people tolerate milk well while others have serious intestinal problems when exposed to it. Don't blame me if you end up stuck on the toilet because you consumed too much milk. Milk does have some carbs in the form of lactose which is supposedly less glycemic than other sugars. Some good substitutes for milk are coconut milk, unsweetened soy milk or unsweetened almond milk. If you are sensitive to milk some other good dairy products where the whey is removed and have less sugar include strained yogurt, cottage cheese, and other cheeses. If you do not have a lot of dairy in your diet make sure you are getting adequate amounts of calcium.

Fats - Believe it or not, there are essential fats in foods that are vital to your overall health. Omega 3′s found in fish are great for you.

Legumes - Legumes such as beans, lentils, and peas have a lot carbs in them. However, these carbs are digested slowly and are excellent choices for people who don't process sugar well. FYI - canned beans are more glycemic than beans you cook yourself. Soy beans are lower in carbohydrates than other beans. Black soy beans are probably your best best because they don't have the bland taste of regular soy beans and they work well in most bean recipes.

Whole grains - While whole grains are often rich in carbs, there are good additions to a low carb diet. The starch is broken down into glucose more slowly than flour and refined grains. A serving of grains is about a half cup. Whole grain pasta should be cooked slightly firm as the more it is cooked the faster it is broken down. You will lose the nutritional value if you cook it for too long. Some good substitutes to pasta which are lower in carbs include spaghetti squash, shirataki noodles, and low carb pastas such as Dreamfields.

Foods you want to stay away from - sugary and starchy foods - aka. foods rapidly produced into glucose

- Foods with lots of sugars such as soft drinks and candies

- Fruit juices - Many fruit juices are packed with sugar. Here are some good guidelines when consuming fruit juices. 8 ounces a day of 100% juice is okay. However, keep in mind, that juices are usually high in calories. If you are really trying to lose weight, substitute the low sugar fruits as mentioned above for fruit juice.

- Foods with tons of flour - Foods such as cakes, cookies, and crackers, are packed with flour and have little nutritional benefit.

It's big news when a favored medical treatment - HRT for menopausal women - is found to be harmful. But it's no news to those who have been blowing the whistle on both scientific and alternative treatments of menopause for nearly two decades. As recently quoted in Newsweek Magazine: "Menopause is not a 'pathology', but a passage to power. Like puberty, menopause is a natural - and healthy - change. Wise women the world over herald menopause as a health-promoting event. They see hot flashes as 'power surges' and menopause as an intense spiritual journey. Most treatments - including ERT, HRT, isoflavone, and progesterone creams - disrupt this process and can do severe damage to a woman's health."

MENOPAUSE IS ENLIGHTENMENT

The energy aspects of menopause are of special interest to me.

As a long-time student of yoga, I was struck by the many similarities between menopausal symptoms and the well-known esoteric goal of "awakening of the kundalini." Though the ideas presented in this section may seem strange or difficult to comprehend, they contain powerful messages about menopause, which lie at the heart of the Wise Woman approach.

Kundalini [is] the root [of] all spiritual experiences... Kundalini is a special kind of energy known in many cultures, including Tibetan, Indian, Sumerian, Chinese, Irish, Aztec, and Greek. Kundalini is said to be hot, fast, powerful, and large. It exists within the earth, within all life, and within each person. Psychoanalyst Carl G. Jung called kundalini anima. Kundalini is usually represented as a serpent coiled at the base of the spine, but women's mystery stories locate it in the uterus - or the area where the uterus was, if a hysterectomy has occurred. During both puberty and menopause, a woman's kundalini is difficult to control and may cause a great number of symptoms.

East Indian yogis spend lifetimes learning to activate, or wake up, their kundalini. This is also called "achieving enlightenment". When they succeed, a surge of super-heated energy goes up the spine, throughout the nerves, dilating blood vessels, and fueling itself with hormones. As kundalini continues to travel up the spine, it changes the functioning of the endocrine, cardiovascular, and nervous systems. Not just in yogis, but in any woman who allows herself to become aware of it. Menopause is a kind of enlightenment. Hot flashes are kundalini training sessions.

TAKING HORMONES? THESE HERBS ARE FOR YOU

More and more American women are using herbal remedies to help them with menopausal problems. Those who do take ERT (estrogen replacement) or HRT (hormone replacement) may be surprised to discover that herbal medicine has a lot to offer them as well.

Herbs for women on ERT/HRT include those that alleviate side-effects as well as those that counter problems caused by the hormones.

Herbal Helpers Counter Side-Effects

Water retention is the symptom most often cited for dissatisfaction with hormone replacement. Herbal tinctures and tea, such as dandelion or cleavers, and ordinary foods can not only relieve the distress, they will go to the root of the problem and help prevent recurrences.

Dandelion root tincture (Taraxacum officinale) strengthens the liver and helps it process out the excess hormones you are taking. When the liver works well, the kidneys work better, and tissues no longer bloat. A dose is 10-20 drops in several ounces of water or juice 2-3 three times a day. If you have any digestion problems, take your dandelion before meals; otherwise, anytime is fine. You can safely take dandelion daily for months or years if you need or want to.

Cleavers herb tincture (Galium molluga) tells the lymphatic tissues to get moving. Relief from edema is usually rapid when 20-30 drops are taken in several ounces of water or juice. Repeat up to six times at hourly intervals if needed. Cleavers is especially helpful for easing swollen, sore breasts.

Foods that relieve water retention include (in order of effectiveness): asparagus, nettles, corn (and corn silk tea), grapes, cucumbers, watermelon (and watermelon seed tea), parsley, celery, black tea, and green tea.

Headaches are the second most common side-effect of hormone use. Unfortunately, they are common among menopausal women not taking hormones, too. Herbs that help relieve headache without a drug-like action - such as dandelion, yellow dock, milk thistle, burdock, garden sage, skullcap, and St. John's/Joan's wort - are generally considered safe to take with hormones.

Chinese herbalists say headaches are caused by liver stress. My favorite liver-strengthening herbs are dandelion, yellow dock, milk thistle seed, and burdock. I use one at a time, a 15-25 drops of the tincture several times a day, for two weeks. If symptoms continue, I switch to a different herb.

A strong tea of garden sage leaves (Salvia officinalis) offers immediate relief from headaches and helps prevent future ones. It also reduces night sweats. Tinctures of skullcap (Scutellaria lateriflora) and St. Joan's/John's wort (Hypericum perforatum) ease pain and relieve muscle spasms. Use 5-20 drops of skullcap and a dropperful of St.J's at the very first sign - no, the very first thought - of a headache. Repeat the doses every five minutes until pain free. Skullcap can be quite sedative, especially in large doses.

Herbal Allies to Prevent Problems Caused by Taking Hormones

Breast cancer risk is increased 20% in women who use ERT for five or more years. Use of HRT for five or more years increases breast cancer risk by 40%. Each five years of continued use increases the risk. In addition, women who take ERT are far more likely to get uterine or endometrial cancers. All women on hormones increase their risks of lung and ovarian cancer, too. Nourishing herbs such as red clover, and foods such as beans and yogurt, offer easy ways to stay cancer-free.

Red clover blossoms (Trifolium pratense), when dried and brewed into a strong infusion (one ounce herb steeped an a quart of boiling water for at least four hours) prevent cancer by providing phytoestrogens that counter the cancer-promoting effects of oral hormones. Usual dose is 2-4 cups a day. The infusion tastes like black tea and can be flavored with mint if you like.

Since uncooked beans and unfermented soy contain anti-nutritional factors that may promote bone loss and dementia, soy "milk" and tofu are not recommended. Miso and tamari definitely help to prevent breast cancer but soy isoflavones may promote it.

Yogurt helps build powerful immunity. Women who eat a quart of yogurt a week have 700% less cancer than women who eat no yogurt.

Dry eyes afflict more than 9% of women using ERT and over 7% of those on HRT. Risk increases by 70% for every year of continued use. And the longer a woman uses hormones, the greater her risk. Herbs such as oatstraw, chamomile, and chickweed can help relieve and prevent this problem.

Oatstraw infusion (Avena sativa) cools and moistens your eyes from the inside out, builds strong bones too. Use one ounce of dried herb in a quart jar; fill to the top with boiling water and cap tightly. Let steep four or more hours. Dose is 2-4 cups a day. Refrigerate after straining.

Cucumber slices ease dry eyes; so do chamomile tea bags.

The ultimate ally for women with dry eyes is fresh chickweed (Stellaria media), applied as a poultice to the closed eyes. Leave on for five minutes, or until the plant material feels warm (it will heat up). Repeat as needed.

Stroke and heart attack are actually increased by use of ERT/HRT, though modern medicine has long proclaimed the opposite. Every major double-blind study done to date has created a larger and larger gap between ERT/HRT's supposed ability to help cardiovascular health and its actual results. Protect your heart with nourishing and tonifying herbs and foods such as motherwort, hawthorn, and cherries.

Motherwort (Leonurus cardiaca) tincture helps the heart. The Japanese claim it is their secret of longevity. A dose is 5-15 drops, twice a day. Motherwort also relieves hot flashes, calms tachycardiia, and eases anxiety. It's an all-in-one remedy for menopausal women.

Hawthorn (Crataegus oxycantha) flowers, leaves, and fruits are all used to maintain heart health and control fluid build-up in heart tissues. A dose is 20- 30 drops of tincture 2-4 times a day, or a cup of tea with meals. This widespread shrub is considered one of the finest heart tonics in the world.

Cherries are even better than apples at keeping the doctor away. Dried cherries and cherry juice, even tincture of cherries.

More than three-quarters of the women in America over the age of fifty have refused ERT/HRT. If you want to join them, taper off your dosage slowly, while continuing to use nourishing and tonifying herbs such as dandelion, motherwort, red clover, oatstraw, and seaweed.

THERE ARE MANY TYPES OF ESTROGENS

Women make estrogens. Plants make estrogens and estrogen-like compounds. Chemicals, especially organochlorines, act like estrogens (xenoestrogens).

Pharmaceutical companies make estrogens from substances such as horse urine, wild yam roots, and petrochemicals. Tamoxifen, used to treat and prevent breast cancer, is a type of pharmaceutical estrogen.

Women make at least thirty types of estrogen, including estradiol, estrone, and estrace. Estradiol is the strongest; it is turned on at puberty and turned off at menopause. Estradiol is positively linked with breast cancer; other human estrogens are not. Anything that reduces the amount of estradiol a woman produces (such as pregnancy, lactation, early menopause, and late puberty) also decreases her risk of a breast cancer diagnosis.

Phytoestrogens counter the detrimental effects of estradiol by competing for the same receptor sites.

Estradiol is a strong estrogen and is metabolized by the long path. The other estrogens our bodies make are weak estrogens and are metabolized by the short path. Alcohol turns off the short path. Phytoestrogens are weak hormones and hormonal precursors. Phytoestrogens in foods are metabolized by the short path. Phytoestrogens appear to protect tissues from the cancer-causing effects of estradiol, xenoestrogens and pharmaceutical hormones. Phytoestrogens in foods prevent cancer and promote health; phytoestrogen supplements and processed soy fake-foods may do the opposite. Breast cancer occurs four times more often in women whose urinary output of phytoestrogen by-products is low compared to women whose urinary output is high.

Phytoestrogens are common in food. They are concentrated in seeds (grains, beans, nuts, berries) and roots. The exceptions to the rule that plants don't contain human hormones: French beans, rice, apple seeds, licorice, and pomegranate seeds contain the "weak" estrogen estrone.

To get the greatest benefit from phytoestrogenic foods and herbs remember:

Isolated phytoestrogens are not as safe as those "in matrix." To make use of plant hormones, you need active, healthy gut flora. Herbs and foods rich in phytoestrogens need to be used in different ways. Phytoestrogens may have different effects on women who do not have their ovaries.

1. Plants contain many types of phytoestrogens; additionally, they contain minerals and other constituents which help our bodies modify the phytoestrogens and so we can use them safely. Red clover is mineral-rich and contains all four of the major types of phytoestrogens: lignans, coumestans, isoflavones, and resorcylic acid lactones. It is the world's best-known anti-cancer herb. In general, foods and herbs rich in phytoestrogens, with the possible exception of licorice, show anti-cancer abilities. Isoflavone, however, when isolated (usually from soy) has the opposite effect: in the lab it encourages the growth of breast cancer cells.

2. Plant hormones, including most phytoestrogens, can't be used by humans. But we can convert them into ones we can use - with the help of our gut bacteria. When women take antibiotics, their excretion of phytoestrogens plummets. Get your gut flora going by eating more yogurt, miso, unpasteurized sauerkraut, homemade beers and wines, picked-by-your-own-hands-and-unwashed fruits and salads, sourdough bread, and whey-fermented vegetables. 3. Plants which are exceptionally rich in phytoestrogens are regarded as powerful herbal medicines. Plants which are good sources of phytoestrogens are regarded as foods. While food can certainly be our medicine - a practice I advocate - it is also true that medicines are more dangerous than foods. Foods rich in phytoestrogens are different than medicinal herbs rich in phytoestrogens. They have different places in my life.

I eat phytoestrogenic foods daily in quantity. I use phytoestrogenic food-like herbs regularly (not daily), in moderate quantity. I take phytoestrogenic herbs rarely, in small amounts, for a limited time.

Phytoestrogenic foods are the basis for a healthy diet and a long life. The first food listed is the highest in phytoestrogens. The best diet contains not just one but many choices from each list:

Whole grains (rye, oats, barley, millet, rice, wheat, corn) Edible seeds (buckwheat, sesame, sunflower, pumpkin, amaranth, quinoa) Beans (yellow split peas, black turtle beans, baby limas, Anasazi beans, red kidney beans, red lentils, soy beans) Leafy greens and seaweed (parsley, nettle, kelp, cabbage, broccoli, kale, collards, lamb's quarter) Fruits (olives, cherries, grapes, apples, pears, peaches, plums, strawberries, blackberries, raspberries, salmon berries, apricots, crab apples, quinces, rosehips, blueberries) Olive oil and seed oils. Garlic, onions and their relatives leeks, chives, scallions, ramps, shallot

Phytoestrogenic food-like herbs are generally considered longevity tonics. For optimum effect, use only one from the list below and to stick with it for at least three months.

Citrus peel, dandelion leaves and/or roots, fenugreek seeds, flax seeds, green tea, hops, red clover, red wine.

Phytoestrogenic herbs are usually too powerful for long- term use. From the list below (which is in alphabetical order), it is safest to use only one herb at a time, and use it only when needed, although that may mean daily use for several months. Agave root, black cohosh root, black currant, black haw, chasteberries, cramp bark, dong quai root, devil's club root, false unicorn root, ginseng root, groundsel herb, licorice, liferoot herb, motherwort herb, peony root, raspberry leaves, rose family plants (most parts), sage leaves, sarsaparilla root, saw palmetto berried, wild yam root, yarrow blossoms.

4. Most of the warnings about phytoestrogenic herbs center on their proven ability to thicken the uterine wall in animals who have had their ovaries removed. This could encourage cancer, just as taking ERT encourages cancer of the uterus by stimulating cell growth. Women without ovaries are probably safe eating phytoestrogenic foods, but may want to use phytoestrogenic herbs - especially ginseng, dong quai, licorice, red clover, and wild yam - in small amounts and only for short periods.

NEWS NOTES ON PHYTOESTROGENIC PLANTS (UPDATED JUNE 2002)

Recent studies indicate black cohosh does not suppress luteinizing hormone, has no estrogenic effect, and contains no compounds related to estrogen. Red clover flower heads contain many hormone-like flavonoids, including isoflavone, daidzein, genistein, formononetin, biochanin, sitosterol, and coumestrol, a particularly strong phytoestrogen (six times more active than the one in soy). Red clover contains all four major estrogenic isoflavones; soy has only two of them. A cup of red clover infusion (not tea) contains ten times more phytoestrogens than a cup of soy beverage, is richer in calcium, has less calories, and contains no added sugars. Researchers in Australia report a million lambs a year are aborted after sheep eat clover on pasture. Yet red clover is renowned as a fertility enhancer. What's up? Stephen Buhner, author of The Secret Language of Plants, says clover plants make blood-thinning compounds (which cause abortion) when overgrazed, but don't otherwise. Plants, it turns out, can fight back. When unfermented soy takes the place of animal protein (meat and milk), its anti-nutritional factors can create brittle bones, thyroid problems, memory loss, vision impairment, irregular heartbeat, depression, and vulnerability to infections. Unfermented soy is high in hemoglutin, which causes clumping of red blood cells and may increase risk of stroke. It is also impressively rich in aluminum (up to 100 times more than is found in the same amount of real milk). Eating tofu more than once a week doubled the risk of Alzheimer's in a small group of Japanese men studied for thirty years. Human gut bacteria can cleave a sugar molecule from wild yam's steroidal saponin, producing diosgenin. Labs make progesterone from diosgenin, but our bodies can't. Diosgenin itself has a weak estrogenic effect. According to Australian herbalist Ruth Trickey: "A more probable explanation [for the observed effects of wild yam]... is that [diosgenin] interacts with hypothalamic and pituitary hormones and... initiates ovulation."
